Quinoa good for fertility? Quinoa is one of the world’s most popular health foods. It is gluten free, high in protein and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. Quinoa is an excellent source of both plant based folate and zinc, two additional micronutrients important to reproductive health.
Try this delicious easy quick black bean quinoa bowl:
1 tsp olive oil
1 onion chopped
3 cloves garlic
¾ cup quinoa
1 ½ cups organic vegetable broth
1 tsp ground cumin
¼ tsp cayenne pepper
salt/pepper to taste
1 cup corn kernels
2 (15 ounce) cans organic black beans rinsed and drained
½ cup fresh cilantro.
- Heat oil in a saucepan over medium heat; cook and stir onion and garlic until lightly browned, about 10 min.
- Mix quinoa into onion mixture and cover with broth; season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat and simmer until quinoa is tender and broth is absorbed, about 20 min.
- Stir corn into saucepan and continue to simmer until heated, about 5 min; mix in black beans and cilantro.
